Iowa Pale Ale

 

Modified IPA kit from True Brew.

7 lbs Light Malt Extract Syrup
1 lb Crystal Malt
1 oz Chinook (60 min) 11.9% Alpha
1 oz Cascade (2 min) 6.0% Alpha
2 oz Heavy Toasted Oak Chips (1 min)
Wyeast 1318 London III Ale Yeast

Fermented at approx. 67 deg F

O.G. 1.052 - 09/14/01

S.G. 1.016 - 09/27/01

F.G. 1.013 - 10/12/01

ABV - 5.1%

Bottled - 09/27/01

This batch was never bottled......instead, we racked to secondary right in the keg and let it finish and self-carbonate in the keg. CO2 was used at low pressure (< 5 psi) only to ensure a good seal, and again to serve once the natural carbonation wasn't enough to push the beer. The mild carbonation and Cellar serving temp (approx 53 deg F) gave this batch a cask-conditioned quality. Tasty, indeed!
