Hard Times Apple CiderMy first attempt at a cider. I started with 4 gallons of fresh Apple Cider from the grocery store. I discovered after I added the Champaign yeast that the cider had Potassium Sorbate, a preservative, in it. I didn't get very active fermentation but I racked to another carboy every month or so and added another yeast starter to it when racking. I did this in hopes of reducing the preservative levels, thinking at least some of it would be absorbed by the dead yeast. I bought a corny keg system to carbonate this batch, as I thought there might still be some of the preservative residual and figured that would hamper bottle carbonation. This came out quite crisp, and tasty,`and we won an award for it! O.G. Approximately 1.040 - 2/5/00 F.G. 1.001 - 7/22/00 Kegged - 7/22/00 Bottled - 8/20/00
